Chloé, a LEAD series graduate and New Women New Yorkers volunteer originally from France, loves this elegant pastry. “It’s just delicious. It tastes much better than a classic apple pie and is very good looking,” she says. Should you find yourself in the French capital city, Tarte Tatin won’t be difficult to find. “It is a very famous pie in Paris,” says Chloe. “You can find it in almost all ‘brasseries parisiennes’ all year long.”

1 flaky pastry crust (can be frozen puff pastry sheet)
5 or 6 medium-size Golden Delicious or Granny Smith apples

  2. Cut butter into small pieces.
  3. Sprinkle sugar, cinnamon, and butter pieces in 9-inch silicone pie mold.
  4. Peel and core apples and cut into quarters.
  5. Place apple quarters, rounded side down, on top of butter/sugar/cinnamon mixture in a circular pattern.
  6. Place the pastry crust on top of the apples and tuck in the edges around the apples. Remove some crust if necessary.
  7. Bake in the preheated oven until crust is golden brown, about 50 minutes.
  8. Allow to cool for 10-15 minutes.
  9. Place a plate over the top of the pie dish and carefully invert to release tarte from the pan.
  10. Enjoy the tarte! It is even more delicious when the pie is still a little warm, but you can enjoy it cold too. You can serve it with vanilla ice cream or a spoonful of heavy cream.
