Bake Tarte Tatin, a beautiful apple pastry found in Parisian brasseries year-round
Chloé, a LEAD series graduate and New Women New Yorkers volunteer originally from France, loves this elegant pastry. “It’s just delicious. It tastes much better than a classic apple pie and is very good looking,” she says. Should you find yourself in the French capital city, Tarte Tatin won’t be difficult to find. “It is a very famous pie in Paris,” says Chloe. “You can find it in almost all ‘brasseries parisiennes’ all year long.”
Tarte Tatin
Approx. 8 servings
Prep time: Approx. 10-15 mins
Cook time: 50 mins
Ingredients:
1 flaky pastry crust (can be frozen puff pastry sheet)
5 or 6 medium-size Golden Delicious or Granny Smith apples
1 cup of white sugar
1/2 cup of unsalted butter
Cinnamon (to taste)
Instructions:
- Preheat oven to 400 degrees Fahrenheit.
- Cut butter into small pieces.
- Sprinkle sugar, cinnamon, and butter pieces in 9-inch silicone pie mold.
- Peel and core apples and cut into quarters.
- Place apple quarters, rounded side down, on top of butter/sugar/cinnamon mixture in a circular pattern.
- Place the pastry crust on top of the apples and tuck in the edges around the apples. Remove some crust if necessary.
- Bake in the preheated oven until crust is golden brown, about 50 minutes.
- Allow to cool for 10-15 minutes.
- Place a plate over the top of the pie dish and carefully invert to release tarte from the pan.
- Enjoy the tarte! It is even more delicious when the pie is still a little warm, but you can enjoy it cold too. You can serve it with vanilla ice cream or a spoonful of heavy cream.
